Description

A fresh and delicious salad featuring grilled flank steak, Gorgonzola cheese, and sweet grilled corn, all tossed in a balsamic vinaigrette.


Ingredients

  • 1 pound flank steak
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 ears of corn, husked
  • 6 cups mixed salad greens (such as arugula, spinach, and romaine)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled Gorgonzola cheese
  • 1/4 cup balsamic vinaigrette
  • 1/4 cup sliced red onion

Instructions

  1. Preheat the grill to medium-high heat.
  2. Rub the flank steak with olive oil, salt, and black pepper.
  3. Grill the steak for about 5-7 minutes on each side for medium-rare, or until desired doneness.
  4. Remove the steak from the grill and let it rest for 10 minutes before slicing thinly against the grain.
  5. While the steak is resting, grill the corn for about 10-12 minutes, turning occasionally, until charred and tender.
  6. Once cooled, cut the kernels off the cob.
  7. In a large bowl, combine the mixed salad greens, cherry tomatoes, Gorgonzola cheese, grilled corn, and red onion.
  8. Drizzle with balsamic vinaigrette and toss gently to combine.
  9. Top the salad with the sliced steak and serve immediately.

Notes

  • For added flavor, marinate the steak in balsamic vinegar and garlic for 1 hour before grilling.
  • You can substitute the Gorgonzola cheese with feta or goat cheese for a different taste.
