A delicious and refreshing BBQ Chicken Ranch Pasta Salad perfect for summer gatherings.


Ingredients

  • 2 cups rotini pasta
  • 1 cup cooked chicken, shredded
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (canned or frozen)
  • 1/2 cup red onion, finely chopped
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup ranch dressing
  • 1/2 cup BBQ sauce
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the cooked pasta, shredded chicken, cherry tomatoes, corn, red onion, and cheddar cheese.
  3. In a separate small bowl, mix together the ranch dressing and BBQ sauce until well combined.
  4. Pour the dressing mixture over the pasta salad and toss gently until everything is evenly coated.
  5. Season with salt and pepper to taste.
  6. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
