Description

BBQ Chicken and Roasted Sweet Potato Bowls are a delightful and simple meal that combines tender chicken, roasted sweet potatoes, and fresh toppings for a satisfying dish.


Ingredients

  • 2 medium sweet potatoes, peeled and diced into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound boneless, skinless chicken breasts
  • 1 cup BBQ sauce (your favorite brand)
  • 1 cup corn (canned or frozen)
  • 1 cup black beans, rinsed and drained
  • 1 avocado, sliced
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

  1. Preheat the oven to 425°F. Line a baking sheet with parchment paper.
  2. In a large bowl, toss the diced sweet potatoes with olive oil, paprika, garlic powder, salt, and black pepper until evenly coated. Spread the sweet potatoes in a single layer on the prepared baking sheet.
  3. Roast the sweet potatoes in the preheated oven for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.
  4. While the sweet potatoes are roasting, season the chicken breasts with salt and pepper. In a skillet over medium heat, cook the chicken for about 6-7 minutes per side, or until fully cooked and no longer pink in the center.
  5. Once the chicken is cooked, remove it from the skillet and shred it using two forks. Return the shredded chicken to the skillet and add the BBQ sauce. Stir to coat the chicken evenly and heat through for about 2-3 minutes.
  6. In serving bowls, layer the roasted sweet potatoes, BBQ chicken, corn, and black beans. Top with sliced avocado and chopped cilantro. Serve with lime wedges on the side.

Notes

  • For extra flavor, try adding a sprinkle of feta cheese on top before serving.
  • You can also substitute the chicken with grilled tofu for a vegetarian option.
