- 4 English muffins, split in half
- 1 ½ cups shredded mozzarella cheese
- 4 large eggs
- ½ teaspoon garlic powder
- ½ teaspoon Italian seasoning

- 1 cup cooked breakfast sausage or diced ham (optional)
- Fresh basil or parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Place the split English muffins on a baking sheet, cut side up.
- Spread about 2 tablespoons of pizza sauce on each muffin half.
- Sprinkle shredded mozzarella cheese evenly over the sauce on each muffin.
- In a bowl, whisk together the eggs, garlic powder, Italian seasoning, salt, and pepper.
- If using, add the cooked sausage or ham to the egg mixture and stir to combine.
- Pour the egg mixture evenly over the cheese on each muffin half.
- Bake in the preheated oven for 15-20 minutes, or until the eggs are set and the cheese is bubbly and golden.
- Remove from the oven and let cool for a few minutes. Garnish with fresh basil or parsley if desired.
Notes
- For a vegetarian option, skip the meat and add more veggies like bell peppers, mushrooms, or spinach.
