Ingredients

  • 1 tablespoon butter
  • 2 small corn or flour tortillas
  • 1/2 avocado, sliced
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup salsa
  • Fresh cilantro, for garnish (optional)

Instructions

  1. In a small bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  2. Heat the butter in a non-stick skillet over medium heat until melted.
  3. Pour the egg mixture into the skillet and gently stir with a spatula, cooking until the eggs are just set but still soft, about 2-3 minutes. Remove from heat.
  4. While the eggs are cooking, warm the tortillas in another skillet or microwave until pliable.
  5. To assemble the tacos, place a portion of scrambled eggs on each tortilla. Top with sliced avocado, shredded cheddar cheese, and salsa.
