- 2 cups cooked shredded chicken
- 1/2 cup buffalo sauce
- 1 cup cooked brown rice
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 avocado, sliced
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- 1/4 cup ranch dressing (optional)
Instructions
- In a medium saucepan, combine the cooked shredded chicken and buffalo sauce over medium heat. Stir until the chicken is heated through and well coated with the sauce, about 5 minutes.
- While the chicken is heating, prepare the brown rice according to package instructions if not already cooked.
- In serving bowls, layer the cooked brown rice as the base.
- Top the rice with the buffalo chicken mixture, followed by black beans, corn, diced tomatoes, and avocado slices.
- Sprinkle shredded cheddar cheese and chopped green onions on top.
- Drizzle with ranch dressing if desired. Serve immediately.
Notes
- For a spicier kick, add sliced jalapeños or a sprinkle of red pepper flakes on top.
- You can also substitute quinoa for brown rice for a different texture and flavor.
