Ingredients

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 4 medium potatoes, peeled and cubed
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream
  • 1/4 cup chopped green onions (for garnish)
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, bell pepper, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened.
  2. Add the chicken broth and cubed potatoes to the pot. Stir in the Cajun seasoning, smoked paprika, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the potatoes are tender.
  3. Once the potatoes are cooked, use a potato masher to mash some of the potatoes in the pot for a creamier texture, leaving some chunks for heartiness.
  4. Stir in the heavy cream and let the soup simmer for an additional 5 minutes. Adjust seasoning to taste.
  5. Serve hot, garnished with chopped green onions and parsley.

Notes

  • For a spicier kick, add diced jalapeños or a dash of hot sauce to the soup.
