Ingredients

  • 8 ounces pasta (spaghetti or penne)
  • 1 can (14.75 ounces) salmon, drained and flaked
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, fresh
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • ¼ teaspoon red pepper flakes (optional)
  • ¼ cup grated Parmesan cheese (optional)
  • Fresh basil for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving ½ cup of the pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
  4. Stir in the flaked salmon and spinach, cooking until the spinach wilts, about 2 minutes.
  5. Add the cooked pasta to the skillet along with the reserved pasta water, lemon juice, salt, pepper, and red pepper flakes (if using). Toss everything together until well combined and heated through.
  6. Serve hot, topped with grated Parmesan cheese and fresh basil if desired.

Notes

  • For added flavor, consider incorporating a splash of white wine after sautéing the garlic and before adding the tomatoes.
  • You can substitute the spinach with kale or arugula for a different taste and texture.
