Description

A delicious and creamy Cheesy Broccoli Bake that is perfect for the whole family.


Ingredients

  • 2 cups fresh broccoli florets
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream of mushroom soup
  • 1/2 cup milk
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/2 cup breadcrumbs
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot of boiling water, blanch the broccoli florets for about 2-3 minutes until bright green and slightly tender. Drain and set aside.
  3. In a large mixing bowl, combine the cooked rice, shredded cheddar cheese, cream of mushroom soup, milk, garlic powder, onion powder, black pepper, and salt. Mix until well combined.
  4. Gently fold in the blanched broccoli until evenly distributed.
  5. Transfer the mixture to a greased 9×9-inch baking dish.
  6. In a small bowl, mix the breadcrumbs with olive oil until the breadcrumbs are evenly coated. Sprinkle the breadcrumb mixture over the top of the broccoli mixture.
  7. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
  8. Remove from the oven and let it cool for a few minutes before serving.

Notes

  • For added protein, consider mixing in cooked chicken or turkey.
  • Swap out the cheddar cheese for mozzarella or a blend of your favorite cheeses for a different flavor profile.
