Ingredients

  • 2 cups fresh broccoli florets
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream of mushroom soup
  • 1/2 cup milk
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup crushed crackers (like Ritz or saltines)
  • 2 tablespoons butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot of boiling water, blanch the broccoli florets for about 2-3 minutes until bright green and slightly tender. Drain and set aside.
  3. In a large mixing bowl, combine the cooked rice, cheddar cheese, cream of mushroom soup, milk, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  4. Fold in the blanched broccoli until evenly distributed.
  5. Pour the mixture into a greased 9×9-inch baking dish.
  6. In a separate bowl, mix the crushed crackers with the melted butter until well coated. Sprinkle the cracker mixture evenly over the top of the casserole.
  7. Bake in the preheated oven for 25-30 minutes or until the casserole is bubbly and the top is golden brown.
  8. Remove from the oven and let it cool for a few minutes before serving.
