Ingredients

  • 2 cups fresh broccoli florets
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded cheddar cheese
  • 1 cup cream of mushroom soup
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/2 cup breadcrumbs (optional)
  • 1 tablespoon olive oil (optional, for breadcrumbs)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, bring water to a boil and blanch the broccoli florets for 2-3 minutes until bright green. Drain and set aside.
  3. In a mixing bowl, combine the cooked rice, cheddar cheese, cream of mushroom soup, milk, garlic powder, onion powder, black pepper, and salt. Stir until well combined.
  4. Gently fold in the blanched broccoli until evenly mixed.
  5. Transfer the mixture to a greased 9×9-inch baking dish.
  6. If using breadcrumbs, mix them with olive oil in a small bowl and sprinkle over the top of the casserole.
  7. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the top is lightly golden.
  8. Remove from the oven and let it cool for a few minutes before serving.
