- 2 cups fresh broccoli florets
- 1 cup cooked rice (white or brown)
- 1 cup shredded cheddar cheese
- 1 cup cream of mushroom soup
- 1/2 cup milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1/2 cup breadcrumbs (optional)
- 1 tablespoon olive oil (optional, for breadcrumbs)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large pot, bring water to a boil and blanch the broccoli florets for 2-3 minutes until bright green. Drain and set aside.
- In a mixing bowl, combine the cooked rice, cheddar cheese, cream of mushroom soup, milk, garlic powder, onion powder, black pepper, and salt. Stir until well combined.
- Gently fold in the blanched broccoli until evenly mixed.
- Transfer the mixture to a greased 9×9-inch baking dish.
- If using breadcrumbs, mix them with olive oil in a small bowl and sprinkle over the top of the casserole.
- Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the top is lightly golden.
- Remove from the oven and let it cool for a few minutes before serving.
Notes
- For a protein boost, add cooked chicken or turkey to the mixture.
- Try using different cheeses like mozzarella or pepper jack for a unique flavor twist.
