Cheesy Ground Beef Enchiladas are savory wraps filled with a delicious mixture of ground beef, spices, and two types of cheese, baked to perfection.

- 1 pound ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1 can (15 ounces) red enchilada sauce
- 8 small flour tortillas
- 1 cup grated sharp cheddar cheese
- 1 cup grated pepper jack cheese
- 1/4 cup fresh cilantro, chopped (optional)
- Sour cream or Greek yogurt (for serving, optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, brown the ground beef with the chopped onion and minced garlic for about 5-7 minutes.
- Drain any excess grease from the pan.
- Add the smoked paprika, ground cumin, sea salt, and black pepper to the skillet and cook for an additional 2 minutes.
- Set aside half of the enchilada sauce and pour the remaining sauce into the skillet, stirring to coat the beef mixture.
- Lay a tortilla flat, spoon 1/4 cup of the beef mixture into the center, add a sprinkle of both cheeses, and roll the tortilla up, tucking in the sides.
- Place each rolled wrap seam-side down in a greased 9×13-inch baking dish.
- Drizzle the reserved enchilada sauce over the top and sprinkle the remaining cheeses on top.
- Cover with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for another 10 minutes until the cheese is melted and bubbly.
- Sprinkle with chopped cilantro if desired and serve with sour cream or Greek yogurt.

- For an extra kick, add diced jalapeños to the beef mixture.
- For a healthier option, substitute ground beef with ground turkey or chicken.
