Ingredients

  • 1 pound boneless, skinless chicken breasts, sliced into thin strips
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 8 small flour tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped (optional)
  • Lime wedges for serving

Instructions

  1. In a large bowl, combine the sliced chicken, olive oil, chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper. Toss until the chicken is well coated. Let marinate for at least 15 minutes for best flavor.
  2. Heat a large skillet over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and no longer pink.
  3. Add the sliced bell peppers and onion to the skillet. Cook for an additional 5 minutes, or until the vegetables are tender but still crisp.
  4. Warm the flour tortillas in a separate skillet or in the microwave for about 30 seconds until soft.
  5. To serve, place a portion of the chicken and vegetable mixture on each tortilla. Top with shredded cheese, sour cream, and cilantro if desired. Squeeze fresh lime juice over the top before rolling up the tortillas.
