Instructions
- In a large skillet, heat the olive oil over medium heat. Add the shredded chicken and diced pineapple, stirring to combine.
- Add the minced chipotle in adobo sauce, garlic powder, onion powder, cumin, smoked paprika, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until heated through and well combined.
- While the chicken mixture is cooking, warm the tortillas in a separate skillet or microwave until pliable.
- To assemble the tacos, place a generous scoop of the chicken and pineapple mixture onto each tortilla. Top with shredded red cabbage and avocado slices.
- Garnish with fresh cilantro and serve with lime wedges on the side.
