  • 1 teaspoon smoked paprika

  • 8 small corn or flour tortillas
  • 1 cup red cabbage, shredded
  • 1 avocado, sliced
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the shredded chicken and diced pineapple, stirring to combine.
  2. Add the minced chipotle in adobo sauce, garlic powder, onion powder, cumin, smoked paprika, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until heated through and well combined.
  3. While the chicken mixture is cooking, warm the tortillas in a separate skillet or microwave until pliable.
  4. To assemble the tacos, place a generous scoop of the chicken and pineapple mixture onto each tortilla. Top with shredded red cabbage and avocado slices.
  5. Garnish with fresh cilantro and serve with lime wedges on the side.
