Ingredients

  • 1/2 cup chipotle ranch dressing
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 cup shredded cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 4 large flour tortillas

Instructions

  1. In a large bowl, combine the grilled chicken and chipotle ranch dressing.
  2. Warm the flour tortillas in a skillet or microwave.
  3. Layer the rice, black beans, corn, cheese, tomatoes, and cilantro on each tortilla.
  4. Add the chipotle ranch chicken mixture on top of the layered ingredients.
  5. Fold the sides of the tortilla in and roll it up tightly to form a burrito.
  6. Serve immediately or grill the burrito for a crispy finish.
