Delicious Churro Cheesecake Bars that combine the flavors of churros and cheesecake in a simple recipe.

- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- ½ cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 large egg
- 1 teaspoon ground cinnamon
- 8 ounces cream cheese, softened
- ½ cup powdered sugar
- 1 large egg
- ¼ cup granulated sugar (for topping)
- 1 teaspoon ground cinnamon (for topping)
- 1 tablespoon unsalted butter, melted (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
- In a large bowl, mix together the flour, granulated sugar, softened butter, vanilla extract, baking powder, salt, and egg until a dough forms.
- Press half of the dough into the bottom of the prepared baking pan to create a crust.
- In another bowl, beat the softened cream cheese until smooth. Add the powdered sugar, vanilla extract, and egg, mixing until well combined.
- Spread the cheesecake mixture evenly over the crust in the baking pan.
- Crumble the remaining dough over the cheesecake layer.
- In a small bowl, combine the granulated sugar and ground cinnamon, then sprinkle this mixture over the top of the crumbled dough.
- Bake for 30-35 minutes or until the top is golden brown and the cheesecake is set.
- Allow to cool in the pan for at least 30 minutes before cutting into bars. For best results, chill in the refrigerator for 1-2 hours before serving.
Notes
- For a richer flavor, consider adding a splash of almond extract to the cheesecake layer.
- You can also substitute the cream cheese with mascarpone for a creamier texture.
