A delicious and easy-to-make Cinnamon Roll Coffee Cake that combines the flavors of cinnamon rolls and coffee cake in one irresistible dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • For the cinnamon swirl:
  • 1/2 cup brown sugar, packed
  • 1 tablespoon ground cinnamon
  • 1/4 cup unsalted butter, melted
  • For the glaze:
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine the flour, granulated sugar, baking powder, salt, and ground cinnamon. Mix well.
  3. Add the softened butter, milk, eggs, and vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed for about 2 minutes until well combined.
  4. In a separate bowl, mix together the brown sugar, ground cinnamon, and melted butter for the cinnamon swirl.
  5. Pour half of the batter into the prepared baking dish and spread it evenly. Sprinkle the cinnamon swirl mixture over the batter, then top with the remaining batter.
  6. Using a knife or a skewer, gently swirl the batter to create a marbled effect.
  7. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. While the cake is baking, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract in a small bowl until smooth.
  9. Once the cake is done, allow it to cool in the pan for about 10 minutes before drizzling the glaze over the top.
  10. Serve warm or at room temperature.

Notes

  • For a richer flavor, try adding chopped nuts or raisins to the cinnamon swirl mixture.
  • You can also substitute almond extract for vanilla in the glaze for a different twist.
