- 1 cup plain Greek yogurt
- 1/4 cup almond butter (or peanut butter)
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup rolled oats
- 1/4 cup mini chocolate chips
- 1/4 teaspoon salt
Instructions
- In a medium mixing bowl, combine the Greek yogurt, almond butter, honey (or maple syrup), and vanilla extract. Mix until smooth and well combined.
- Add the rolled oats, mini chocolate chips, and salt to the yogurt mixture. Stir until all ingredients are evenly incorporated.
- Using a tablespoon, scoop the mixture and roll it into small balls. Place the bites on a parchment-lined baking sheet.
- Once all the dough is shaped, place the baking sheet in the freezer for about 30 minutes to firm up the bites.
- After chilling, transfer the bites to an airtight container and store them in the refrigerator for up to one week or in the freezer for longer storage.
Notes
- For a nut-free version, substitute almond butter with sunflower seed butter.
- Add a pinch of cinnamon or a tablespoon of cocoa powder for a different flavor profile.
