Ingredients

  • 8 ounces rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, canned or frozen (thawed)
  • 1 cup black beans, drained and rinsed
  • 1 cup diced bell pepper (any color)
  • 1/2 cup red onion, finely chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup ranch dressing
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the cooled pasta, cherry tomatoes, corn, black beans, bell pepper, red onion, and cilantro.
  3. In a separate small bowl, whisk together the ranch dressing and taco seasoning until well combined.
  4. Pour the dressing over the pasta salad and toss gently to coat all ingredients evenly.
  5. Season with salt and pepper to taste.
  6. Cover and refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled or at room temperature.
