- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 medium carrots, sliced
- 2 celery stalks, sliced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon black pepper
- 6 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 cup frozen peas
- 1 cup corn (fresh or frozen)
- 1 bay leaf
- Salt to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
- Stir in the minced garlic, sliced carrots, and celery. Cook for another 5 minutes, stirring occasionally.
- Add the dried thyme, dried rosemary, and black pepper. Mix well and cook for 1 minute until fragrant.
- Pour in the chicken broth and bring the mixture to a boil.
- Once boiling, add the shredded chicken, frozen peas, corn, and bay leaf. Reduce the heat to low and let it simmer for 20-25 minutes.
- Remove the bay leaf, taste the soup, and add salt as needed.
- Serve hot, garnished with fresh parsley.
Notes
- For a creamier soup, stir in 1/2 cup of heavy cream just before serving.
- Add your favorite vegetables such as spinach or zucchini for extra nutrition and flavor.
