Ingredients

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon black pepper
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup frozen peas
  • 1 cup corn (fresh or frozen)
  • 1 bay leaf
  • Salt to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  2. Stir in the minced garlic, sliced carrots, and celery. Cook for another 5 minutes, stirring occasionally.
  3. Add the dried thyme, dried rosemary, and black pepper. Mix well and cook for 1 minute until fragrant.
  4. Pour in the chicken broth and bring the mixture to a boil.
  5. Once boiling, add the shredded chicken, frozen peas, corn, and bay leaf. Reduce the heat to low and let it simmer for 20-25 minutes.
  6. Remove the bay leaf, taste the soup, and add salt as needed.
  7. Serve hot, garnished with fresh parsley.
