A refreshing and flavorful Crack Corn Salad perfect for summer gatherings.
Ingredients

- 2 cups frozen sweet corn, thawed
- 1 cup cherry tomatoes, halved
- 1 cup diced cucumber
- 1/2 cup red onion, finely chopped
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon apple cider vinegar
- 1 teaspoon sugar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup crumbled bacon (optional)
- 1/4 cup chopped fresh cilantro or parsley (for garnish)
Instructions
- In a large mixing bowl, combine the thawed corn, cherry tomatoes, cucumber, and red onion.
- In a separate bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, sugar, garlic powder, onion powder, salt, and pepper until smooth.
- Pour the dressing over the corn mixture and stir gently until everything is well coated.
- If using, fold in the crumbled bacon for added flavor and texture.
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
- Before serving, give the salad a good stir and garnish with chopped cilantro or parsley.
Notes
- For a spicy kick, add diced jalapeños or a dash of hot sauce to the dressing.
- Substitute Greek yogurt for sour cream for a lighter version of the dressing.
