A delightful and flavor-packed creamy BBQ chicken salad that combines shredded chicken with a tangy dressing and fresh vegetables.
Ingredients

- 3 cups cooked chicken, shredded
- 1 cup mayonnaise
- 1/2 cup BBQ sauce
- 1/4 cup plain Greek yogurt
- 1/2 cup celery, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup corn, drained (canned or frozen)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese (optional)
- 1/4 cup fresh cilantro, chopped (optional)
Instructions
- In a large mixing bowl, combine the shredded chicken, mayonnaise, BBQ sauce, and Greek yogurt. Mix until well combined.
- Add the diced celery, red onion, corn, garlic powder, onion powder, salt, and pepper. Stir until all ingredients are evenly mixed.
- If using, fold in the shredded cheddar cheese and chopped cilantro for added flavor.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve the salad on a bed of greens, in a sandwich, or in a wrap.
Notes
- For a lighter version, substitute half of the mayonnaise with additional Greek yogurt.
- Add diced apples or grapes for a sweet crunch and extra flavor.
