- 8 ounces of pasta (fettuccine or spaghetti)
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1 pint of cherry tomatoes, halved
- 1 teaspoon of red pepper flakes (optional)
- Salt and pepper to taste
- 8 ounces of burrata cheese
- Fresh basil leaves for garnish
- Parmesan cheese for serving
Instructions
- Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the halved cherry tomatoes to the skillet and cook for about 5-7 minutes, stirring occasionally, until they soften and start to burst. If using, add the red pepper flakes for a bit of heat.
- Season the tomato mixture with salt and pepper to taste. Add the cooked pasta to the skillet and toss to combine. If the pasta seems dry, gradually add reserved pasta water until you reach your desired consistency.
- Remove the skillet from heat and gently tear the burrata cheese into pieces, adding it to the pasta. Toss lightly to combine, allowing the cheese to melt slightly.
- Serve immediately, garnished with fresh basil leaves and grated Parmesan cheese.
Notes
- For added protein, consider adding grilled chicken or shrimp to the pasta.
- Try substituting the cherry tomatoes with sun-dried tomatoes for a different flavor profile.
