- 1/4 cup cream cheese, softened

- 2 tablespoons erythritol (or your preferred sweetener)
- 1 tablespoon butter, melted (for brushing)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the almond flour, coconut flour, baking powder, and salt. Mix well.
- In a separate bowl, blend the softened cream cheese, egg, and vanilla extract until smooth.
- Gradually add the dry ingredients to the cream cheese mixture, stirring until a dough forms.
- Place the dough between two sheets of parchment paper and roll it out into a rectangle about 1/4 inch thick.
- In a small bowl, mix the cinnamon and erythritol together. Sprinkle this mixture evenly over the rolled-out dough.
- Carefully roll the dough from one long side to the other, creating a log shape. Slice the log into 1-inch pieces.
- Place the roll-ups on the prepared baking sheet and brush the tops with melted butter.
- Bake for 15-20 minutes or until golden brown and crispy. Allow to cool slightly before serving.
Notes
- For added flavor, mix in a teaspoon of nutmeg or a splash of almond extract to the dough.
