- 2 large buttery croissants
- 4 large eggs
- 1/4 cup cream
- Salt and freshly cracked black pepper to taste
- 4 slices of sharp cheddar cheese
- 4 strips of crispy bacon or breakfast sausage patties
- 1/2 ripe avocado, sliced (optional)
- A handful of fresh arugula or baby spinach (optional)
Instructions
- Preheat your oven to 350°F (175°C). Slice the croissants in half and place them cut side up on a baking tray.
- In a bowl, whisk together the eggs and cream, seasoning with salt and pepper until fluffy and well-blended.
- Heat a non-stick skillet over medium heat and pour in the egg mixture. Cook gently, stirring occasionally, until the eggs are softly scrambled and slightly creamy, about 3-4 minutes.
- Remove the eggs from the heat. On the bottom half of each croissant, lay a slice of cheddar cheese, then spoon the scrambled eggs on top.
- Layer on a strip of bacon or a sausage patty for each sandwich. Add slices of avocado and a handful of fresh arugula or spinach if desired.
- Place the top half of the croissant on each sandwich and transfer them to the oven. Bake for 5-7 minutes, until the croissants are warmed through and the cheese is melted.
- Serve the sandwiches warm and enjoy your breakfast treat!

- For a vegetarian option, omit the bacon or sausage.
