Description

A delicious and crunchy wrap filled with shredded chicken, black beans, corn, and fresh vegetables, perfect for a quick meal.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 cup diced bell peppers (any color)
  • 1 cup shredded cheddar cheese
  • 1/2 cup ranch dressing
  • 1 tablespoon taco seasoning
  • 4 large flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro (optional)
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the shredded chicken, black beans, corn, diced bell peppers, cheddar cheese, ranch dressing, taco seasoning, salt, and pepper. Mix well until all ingredients are evenly coated.
  2. Lay out the flour tortillas on a clean surface.
  3. Divide the chicken mixture evenly among the tortillas, placing it in the center of each one.
  4. Top each filling with shredded lettuce, diced tomatoes, and chopped cilantro if using.
  5. Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top to form a wrap.
  6. If desired, heat a skillet over medium heat and place the wraps seam-side down. Cook for 2-3 minutes on each side until golden brown and crispy.
  7. Slice the wraps in half and serve immediately with extra ranch dressing or salsa on the side.
