- 2 cups cooked chicken, shredded
- 1 cup black beans, drained and rinsed
- 1 cup corn, canned or frozen
- 1 cup diced bell peppers (any color)
- 1 cup shredded cheddar cheese
- 1/2 cup ranch dressing
- 1 tablespoon taco seasoning
- 4 large flour tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup chopped fresh cilantro (optional)
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the shredded chicken, black beans, corn, diced bell peppers, cheddar cheese, ranch dressing, taco seasoning, salt, and pepper. Mix well until all ingredients are evenly coated.
- Lay out the flour tortillas on a clean surface.
- Divide the chicken mixture evenly among the tortillas, placing it in the center of each one.
- Top each filling with shredded lettuce, diced tomatoes, and chopped cilantro if using.
- Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top to form a wrap.
- If desired, heat a skillet over medium heat and place the wraps seam-side down. Cook for 2-3 minutes on each side until golden brown and crispy.
- Slice the wraps in half and serve immediately with extra ranch dressing or salsa on the side.
Notes
- For a spicier kick, add diced jalapeños or a splash of hot sauce to the chicken mixture.
- Substitute the chicken with grilled shrimp or tofu for a different protein option.
