Instructions
- In a medium bowl, combine the ricotta cheese, powdered sugar, 1/2 teaspoon vanilla extract, and cinnamon. Mix until smooth and well combined. Set aside.
- In another bowl, whisk together the eggs, milk, and 1 teaspoon vanilla extract until fully blended.
- Take one slice of bread and spread a generous amount of the ricotta mixture on one side. Top with another slice of bread to create a sandwich. Repeat with the remaining slices.
- Heat a large skillet or griddle over medium heat and add the butter, allowing it to melt and coat the surface.
- Dip each sandwich into the egg mixture, ensuring both sides are well coated. Allow excess to drip off.
- Place the coated sandwiches in the skillet and cook for about 3-4 minutes on each side, or until golden brown and cooked through.
- Remove from the skillet and let cool slightly. Slice each sandwich in half diagonally.
- Serve warm, garnished with chocolate chips, chopped pistachios, and a drizzle of maple syrup.
