A comforting and flavorful Dill Pierogi Soup that combines the heartiness of vegetables with the delightful taste of pierogi.

- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 medium potatoes, diced
- 1 cup carrots, sliced
- 1 cup frozen pierogi (potato and cheese or your choice)
- 1 cup fresh dill, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup sour cream (optional for serving)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Pour in the vegetable broth and add the diced potatoes and sliced carrots. Bring to a boil, then reduce heat and let simmer for 10-15 minutes, or until the vegetables are tender.
- Add the frozen pierogi to the pot and cook for an additional 5-7 minutes, or until they are heated through.
- Stir in the chopped dill, salt, and black pepper. Adjust seasoning to taste.
- Serve hot, with a dollop of sour cream on top if desired.
Notes
- For a creamier soup, blend a portion of the soup and return it to the pot before adding the pierogi.
- Try adding other vegetables like spinach or corn for extra flavor and nutrition.
