Description

A simple and delicious recipe for fluffy homemade pancakes that are perfect for breakfast. These pancakes are light, airy, and can be customized with your favorite toppings.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  2. In another bowl, beat the eggs and then add the milk, melted butter, and vanilla extract. Mix until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.
  4. Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.
  5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  6. Flip the pancakes and cook for an additional 1-2 minutes until golden brown.
  7. Repeat with the remaining batter, adjusting the heat as necessary to prevent burning.
  8. Serve warm with your favorite toppings such as maple syrup, fresh fruit, or whipped cream.

Notes

  • For added flavor, mix in 1/2 cup of chocolate chips or blueberries into the batter before cooking.
  • To make the pancakes extra fluffy, let the batter rest for 5-10 minutes before cooking.
