- 1 pound ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg
- 2 tablespoons olive oil
- 1 cup cooked quinoa or rice
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup tzatziki sauce
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, garlic powder, onion powder, oregano, salt, pepper, and egg. Mix until well combined.
- Form the mixture into 1-inch meatballs and place them on the prepared baking sheet.
- Drizzle olive oil over the meatballs and bake for 20-25 minutes, or until cooked through and golden brown.
- While the meatballs are baking, prepare the quinoa or rice according to package instructions.
- In a serving bowl, layer cooked quinoa or rice, cherry tomatoes, cucumber, red onion, and baked meatballs.
- Top with crumbled feta cheese and a generous dollop of tzatziki sauce.
- Serve warm and enjoy!
Notes
- For added flavor, try adding a squeeze of fresh lemon juice over the bowls before serving.
- You can also substitute ground turkey for the chicken for a different taste.
