A delicious grilled chicken sandwich featuring avocado and a spicy chipotle mayo.

- 2 boneless, skinless chicken breasts (about 1 pound)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil
- 4 sandwich rolls (brioche or whole wheat)
- 1 ripe avocado, sliced
- 1 cup lettuce (romaine or spinach)
- ½ cup sliced tomatoes
- ½ cup mayonnaise
- 1 tablespoon chipotle sauce (or more to taste)
- 1 teaspoon lime juice
Instructions
- Preheat your grill to medium-high heat. If using a grill pan, heat it over medium-high heat on the stovetop.
- In a small bowl, mix together garlic powder, onion powder, paprika, salt, and black pepper. Rub the spice mixture evenly over both sides of the chicken breasts.
- Drizzle olive oil over the chicken breasts and ensure they are well coated.
- Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove from the grill and let rest for 5 minutes.
- While the chicken is resting, prepare the chipotle mayo by mixing mayonnaise, chipotle sauce, and lime juice in a small bowl. Adjust the chipotle sauce to your desired spice level.
- Slice the grilled chicken breasts and toast the sandwich rolls on the grill for 1-2 minutes until golden brown.
- Assemble the sandwiches by spreading chipotle mayo on both sides of the rolls. Layer with lettuce, sliced tomatoes, grilled chicken, and avocado. Close the sandwich and serve immediately.
Notes
- For added flavor, marinate the chicken in the spice mixture and olive oil for at least 30 minutes before grilling.
- Substitute the chipotle mayo with a garlic aioli or a pesto spread for a different flavor profile.
