Description

A delicious grilled chicken sandwich featuring avocado and a spicy chipotle mayo.


Ingredients

  • 2 boneless, skinless chicken breasts (about 1 pound)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 sandwich rolls (brioche or whole wheat)
  • 1 ripe avocado, sliced
  • 1 cup lettuce (romaine or spinach)
  • ½ cup sliced tomatoes
  • ½ cup mayonnaise
  • 1 tablespoon chipotle sauce (or more to taste)
  • 1 teaspoon lime juice

Instructions

  1. Preheat your grill to medium-high heat. If using a grill pan, heat it over medium-high heat on the stovetop.
  2. In a small bowl, mix together garlic powder, onion powder, paprika, salt, and black pepper. Rub the spice mixture evenly over both sides of the chicken breasts.
  3. Drizzle olive oil over the chicken breasts and ensure they are well coated.
  4. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove from the grill and let rest for 5 minutes.
  5. While the chicken is resting, prepare the chipotle mayo by mixing mayonnaise, chipotle sauce, and lime juice in a small bowl. Adjust the chipotle sauce to your desired spice level.
  6. Slice the grilled chicken breasts and toast the sandwich rolls on the grill for 1-2 minutes until golden brown.
  7. Assemble the sandwiches by spreading chipotle mayo on both sides of the rolls. Layer with lettuce, sliced tomatoes, grilled chicken, and avocado. Close the sandwich and serve immediately.

Notes

  • For added flavor, marinate the chicken in the spice mixture and olive oil for at least 30 minutes before grilling.
  • Substitute the chipotle mayo with a garlic aioli or a pesto spread for a different flavor profile.
