Description

Grilled Honey BBQ Bacon Chicken Kabobs are a delicious and easy-to-make dish that combines tender chicken, crispy bacon, and a sweet and tangy barbecue sauce.


Ingredients

  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 8 slices of bacon, cut into thirds
  • 1 cup barbecue sauce
  • 1/4 cup honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • Skewers (wooden or metal)

Instructions

  1. Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a large bowl, combine the barbecue sauce, honey, apple cider vinegar, garlic powder, onion powder, smoked paprika, black pepper, and salt. Mix well.
  3. Add the chicken cubes to the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
  4. Once marinated, thread the chicken cubes onto the skewers, alternating with pieces of bacon.
  5. Place the skewers on the preheated grill and cook for 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature of the chicken should reach 165°F.
  6. Remove from the grill and let rest for a few minutes before serving. Brush with additional barbecue sauce if desired.

Notes

  • For a spicier kick, add some diced jalapeños to the skewers before grilling.
  • To make this dish even more colorful, include bell peppers and onions between the chicken and bacon on the skewers.
