- 2 pounds boneless, skinless chicken breasts
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice (about 2 lemons)
- 2 tablespoons Dijon mustard
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a medium bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, rosemary, thyme, salt, and black pepper until well combined.
- Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 8 hours for more flavor.
- Preheat your grill to medium-high heat.
- Remove the chicken from the marinade and discard the leftover marinade.
- Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F.
- Remove the chicken from the grill and let it rest for 5 minutes before slicing.
Notes
- For a smoky flavor, add a teaspoon of smoked paprika to the marinade.
- To make it a complete meal, serve the grilled chicken with a side of roasted vegetables or a fresh salad.
