Description

A delicious one-pan meal featuring tender chicken breasts coated in a sweet and tangy honey BBQ sauce, served over fluffy rice with corn and garnished with green onions.

Ingredients

Scale
  • 2 cups cooked white rice
  • 1 pound boneless, skinless chicken breasts
  • 1 cup BBQ sauce
  • 1/4 cup honey
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika
  • 1 cup corn (fresh or frozen)
  • 1/2 cup chopped green onions (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together the BBQ sauce and honey until well combined. Set aside.
  3. Season the chicken breasts with garlic powder, onion powder, salt, black pepper, and smoked paprika.
  4. Heat olive oil in a large oven-safe skillet over medium-high heat. Add the seasoned chicken breasts and sear for about 4-5 minutes on each side until golden brown.
  5. Pour the honey BBQ sauce over the chicken, ensuring it is well coated.
  6. Add the corn around the chicken in the skillet.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  8. While the chicken is baking, prepare the cooked rice according to package instructions if not already done.
  9. Once the chicken is done, remove it from the oven and let it rest for 5 minutes.
  10. Serve the chicken over a bed of rice, drizzling any remaining sauce from the skillet on top. Garnish with chopped green onions.

Notes

  • For a spicier kick, add a teaspoon of cayenne pepper to the seasoning mix.
  • Substitute brown rice for white rice for a nuttier flavor and added fiber.
