- 2 pounds boneless, skinless chicken thighs
- 1 cup honey
- 1 cup BBQ sauce
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 pounds baby potatoes, halved
- 4 tablespoons unsalted butter, melted
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine honey, BBQ sauce, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the chicken thighs and toss to coat evenly.
- Place the coated chicken thighs in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- While the chicken is baking, prepare the potatoes. In a large bowl, mix the halved baby potatoes with melted butter, minced garlic, salt, and pepper.
- Spread the potatoes on a baking sheet in a single layer and roast in the oven for 20-25 minutes, or until golden brown and tender.
- Remove the potatoes from the oven and sprinkle with grated Parmesan cheese and chopped parsley. Toss to combine.
- Once the chicken is done, let it rest for a few minutes before serving. Serve the chicken alongside the garlic Parmesan potatoes.
Notes
- For a spicier kick, add a teaspoon of cayenne pepper to the honey BBQ sauce mixture.
- Substitute the baby potatoes with sweet potatoes for a different flavor profile and added nutrients.
