Ingredients

  • 2 cups cooked white or brown rice
  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 cup honey
  • 2 tablespoons chipotle sauce (adjust to taste)
  • 1 tablespoon lime juice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges for serving

Instructions

  1. Cook the rice according to package instructions and set aside.
  2. In a bowl, mix together honey, chipotle sauce, and lime juice. Set aside.
  3. Season the chicken breasts with salt, pepper, garlic powder, and onion powder.
  4. Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until cooked through and no longer pink in the center.
  5. Once the chicken is cooked, pour the honey-chipotle mixture over the chicken in the skillet. Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.
  6. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.
  7. To assemble the bowls, divide the cooked rice among four bowls. Top each bowl with sliced chicken, black beans, corn, avocado, cherry tomatoes, and cilantro.
  8. Serve with lime wedges on the side for an extra burst of flavor.
