- 2 cups cooked white or brown rice
- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 cup honey
- 2 tablespoons chipotle sauce (adjust to taste)
- 1 tablespoon lime juice
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 avocado, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- Lime wedges for serving
Instructions
- Cook the rice according to package instructions and set aside.
- In a bowl, mix together honey, chipotle sauce, and lime juice. Set aside.
- Season the chicken breasts with salt, pepper, garlic powder, and onion powder.
- Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until cooked through and no longer pink in the center.
- Once the chicken is cooked, pour the honey-chipotle mixture over the chicken in the skillet. Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.
- Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.
- To assemble the bowls, divide the cooked rice among four bowls. Top each bowl with sliced chicken, black beans, corn, avocado, cherry tomatoes, and cilantro.
- Serve with lime wedges on the side for an extra burst of flavor.

- For a vegetarian option, substitute the chicken with grilled tofu or roasted vegetables.
