Description

Huli Huli Chicken Tacos are a tropical flavor adventure featuring marinated grilled chicken served in corn tortillas with fresh toppings.


Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup fresh pineapple juice
  • 1/2 cup tamari sauce
  • 1/4 cup dark brown sugar
  • 1 tablespoon freshly grated ginger
  • 3 cloves garlic, finely chopped
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon canola oil
  • 8 small corn tortillas
  • 1 cup finely shredded cabbage
  • 1/2 cup fresh pineapple, diced
  • 1/4 cup chopped scallions
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges for garnish

Instructions

  1. In a mixing bowl, blend together the pineapple juice, tamari sauce, dark brown sugar, ginger, garlic, sesame oil, and black pepper until the sugar fully dissolves.
  2. Submerge the chicken thighs in the marinade, ensuring they are well-coated. Cover the bowl and let it marinate in the refrigerator for a minimum of 1 hour, or overnight for a deeper flavor.
  3. Heat your grill or grill pan to a medium-high setting. Take the chicken out of the marinade, allowing any excess to drip off, and discard the leftover marinade.
  4. Lightly coat the grill or grill pan with canola oil. Grill the chicken for approximately 6-7 minutes on each side, or until it reaches an internal temperature of 165°F and has beautiful grill marks.
  5. Once done, take the chicken off the grill and let it rest for about 5 minutes.
  6. While the chicken is resting, place the corn tortillas on the grill for about 30 seconds on each side until they are warm and flexible.
  7. Slice the grilled chicken into thin strips.
  8. To build your tacos, lay a few strips of chicken on each tortilla, then generously top with shredded cabbage, diced pineapple, scallions, and cilantro.
  9. Serve the tacos with lime wedges on the side for an extra zesty touch.
