Huli Huli Chicken Tacos are a tropical flavor adventure featuring marinated grilled chicken served in corn tortillas with fresh toppings.

- 2 pounds boneless, skinless chicken thighs
- 1 cup fresh pineapple juice
- 1/2 cup tamari sauce
- 1/4 cup dark brown sugar
- 1 tablespoon freshly grated ginger
- 3 cloves garlic, finely chopped
- 1 teaspoon toasted sesame oil
- 1 teaspoon freshly ground black pepper
- 1 tablespoon canola oil
- 8 small corn tortillas
- 1 cup finely shredded cabbage
- 1/2 cup fresh pineapple, diced
- 1/4 cup chopped scallions
- 1/4 cup fresh cilantro, chopped
- Lime wedges for garnish
Instructions
- In a mixing bowl, blend together the pineapple juice, tamari sauce, dark brown sugar, ginger, garlic, sesame oil, and black pepper until the sugar fully dissolves.
- Submerge the chicken thighs in the marinade, ensuring they are well-coated. Cover the bowl and let it marinate in the refrigerator for a minimum of 1 hour, or overnight for a deeper flavor.
- Heat your grill or grill pan to a medium-high setting. Take the chicken out of the marinade, allowing any excess to drip off, and discard the leftover marinade.
- Lightly coat the grill or grill pan with canola oil. Grill the chicken for approximately 6-7 minutes on each side, or until it reaches an internal temperature of 165°F and has beautiful grill marks.
- Once done, take the chicken off the grill and let it rest for about 5 minutes.
- While the chicken is resting, place the corn tortillas on the grill for about 30 seconds on each side until they are warm and flexible.
- Slice the grilled chicken into thin strips.
- To build your tacos, lay a few strips of chicken on each tortilla, then generously top with shredded cabbage, diced pineapple, scallions, and cilantro.
- Serve the tacos with lime wedges on the side for an extra zesty touch.
