Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound kielbasa, sliced
  • 4 cups chicken broth
  • 4 medium potatoes, peeled and diced
  • 2 cups kale or spinach, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup heavy cream
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  2. Add the sliced kielbasa to the pot and cook until browned, about 5-7 minutes.
  3. Pour in the chicken broth and add the diced potatoes. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes, or until the potatoes are tender.
  4. Stir in the chopped kale or spinach, dried thyme, smoked paprika, salt, and pepper. Cook for another 5 minutes until the greens are wilted.
  5. Reduce the heat to low and stir in the heavy cream. Allow the soup to heat through for about 2-3 minutes, then remove from heat.
  6. Serve hot, garnished with fresh parsley.

Notes

  • For a lighter version, substitute heavy cream with half-and-half or coconut milk.
