Ingredients

  • 8 ounces penne pasta
  • 1 tablespoon olive oil
  • 12 ounces kielbasa, sliced
  • 3 cloves garlic, minced
  • 4 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced kielbasa and cook until browned, about 5-7 minutes.
  3. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. Add the fresh spinach and cherry tomatoes to the skillet. Cook until the spinach is wilted and the tomatoes are softened, about 3-4 minutes.
  5. Toss the cooked pasta into the skillet with the kielbasa mixture. Add the Italian seasoning, salt, and pepper. If the pasta seems dry, add a little reserved pasta water to reach the desired consistency.
  6. Remove from heat and stir in the grated Parmesan cheese until well combined.
  7. Serve hot, garnished with additional Parmesan if desired.

Notes

  • For a spicy kick, add red pepper flakes when cooking the garlic.
  • You can substitute the kielbasa with chicken sausage or turkey sausage for a lighter option.
