- ½ cup sour cream

Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the russet potatoes, then cut them into thin fries.
- In a large bowl, toss the cut fries with vegetable oil, garlic powder, paprika, salt, and black pepper until evenly coated.
- Spread the fries in a single layer on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and crispy.
- Remove the fries from the oven and sprinkle the shredded cheddar cheese and crumbled bacon over the top.
- Return to the oven for an additional 5 minutes, or until the cheese is melted.
- Serve hot, topped with sour cream, green onions, and jalapeños if desired.
Notes
- For extra crunch, soak the cut fries in cold water for 30 minutes before baking to remove excess starch, then dry thoroughly.
