Instructions
- In a large mixing bowl, combine the diced mangos, cucumber, red bell pepper, red onion, and cilantro. If you like a bit of heat, add the finely chopped jalapeño.
- In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
- Pour the dressing over the salad mixture and gently toss to combine.
