Delicious Mexican Pulled Chicken Tacos that are bursting with flavor and easy to make.

- 2 pounds boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup chicken broth
- 1 can (14.5 ounces) diced tomatoes with green chilies
- 8 small corn or flour tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup shredded cheese (cheddar or Mexican blend)
- 1/4 cup fresh cilantro, chopped
- Lime wedges for serving
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
- In a small bowl, mix together the chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Sprinkle the spice mixture over the onions and garlic, stirring to combine.
- Add the chicken breasts to the skillet, followed by the chicken broth and diced tomatoes with green chilies. Bring the mixture to a simmer.
- Cover the skillet and reduce the heat to low. Cook for 25-30 minutes, or until the chicken is cooked through and easily shreds with a fork.
- Remove the chicken from the skillet and shred it using two forks. Return the shredded chicken to the skillet, mixing it with the sauce. Cook for an additional 5 minutes to allow the flavors to meld.
- Warm the tortillas in a dry skillet or microwave. Assemble the tacos by placing a generous portion of the pulled chicken on each tortilla. Top with shredded lettuce, diced tomatoes, cheese, and cilantro. Serve with lime wedges on the side.
Notes
- For a spicier kick, add sliced jalapeños to the tacos or mix in some hot sauce with the pulled chicken.
- For a lighter version, serve the pulled chicken over a bed of lettuce instead of in tortillas.
