  • 2 cups cooked spaghetti
  • 1 cup cooked, shredded chicken
  • 1 cup Monterey Jack cheese, shredded
  • 1 cup diced tomatoes (canned or fresh)
  • 1/2 cup green bell pepper, diced
  • 1/2 cup onion, diced
  • 1/2 cup barbecue sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 cup fresh cilantro, chopped (optional for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and green bell pepper, cooking until softened, about 5 minutes.
  3. Stir in the cooked chicken, diced tomatoes, barbecue sauce, garlic powder, onion powder, salt, and black pepper. Cook for another 3-4 minutes until heated through.
  4. In a large mixing bowl, combine the cooked spaghetti with the chicken mixture. Mix well to ensure the spaghetti is evenly coated.
  5. Transfer the mixture to a greased 9×13 inch baking dish. Top with shredded Monterey Jack cheese.
  6. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro if desired before serving.
