- 4 chicken thighs (bone-in, skin-on)
- 4 chicken drumsticks
- 1 cup barbecue sauce (your favorite brand)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil for easy cleanup and place a wire rack on top.
- In a large bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well to create a seasoning paste.
- Add the chicken thighs and drumsticks to the bowl, ensuring they are well-coated with the seasoning paste.
- Place the seasoned chicken on the wire rack, skin side up. This allows the heat to circulate and helps the skin get crispy.
- Roast the chicken in the preheated oven for 35-40 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.
- During the last 10 minutes of cooking, brush the chicken with barbecue sauce, reserving some for serving.
- Once cooked, remove the chicken from the oven and let it rest for 5 minutes before serving. Serve with extra barbecue sauce on the side.
Notes
- For a spicier kick, add a teaspoon of cayenne pepper to the seasoning mix or use a spicy barbecue sauce.
- You can substitute chicken breasts for thighs and drumsticks if you prefer white meat, but adjust the cooking time as breasts may cook faster.
