  • 1 cup sparkling mineral water
  • Crushed ice
  • Sprigs of fresh mint for decoration

Instructions

  1. Begin by placing the diced peaches in a blender along with the fresh lemon juice and maple syrup or agave nectar, if desired. Blend until you achieve a silky puree.
  2. Next, take a fine mesh strainer and pour the peach mixture through it into a large bowl, using a spatula to press down and extract as much juice as you can.
  3. Prepare your serving glasses by filling them with crushed ice. Pour the peach puree over the ice, filling each glass about halfway.
  4. Carefully add the sparkling mineral water to each glass, allowing the bubbles to mix with the peach puree without stirring too vigorously.
