- 1 tablespoon fresh lemon juice
- 1 tablespoon maple syrup or agave nectar (optional)
- 1 cup sparkling mineral water
- Crushed ice

Instructions
- Begin by placing the diced peaches in a blender along with the fresh lemon juice and maple syrup or agave nectar, if desired. Blend until you achieve a silky puree.
- Next, take a fine mesh strainer and pour the peach mixture through it into a large bowl, using a spatula to press down and extract as much juice as you can.
- Prepare your serving glasses by filling them with crushed ice. Pour the peach puree over the ice, filling each glass about halfway.
- Carefully add the sparkling mineral water to each glass, allowing the bubbles to mix with the peach puree without stirring too vigorously.
- Finish off by garnishing with sprigs of fresh mint, and enjoy your refreshing drink right away.
