- 1/3 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon honey

- 1 tablespoon sesame oil
- 1 teaspoon garlic, minced
Instructions
- In a large bowl, combine the salad greens, chicken, bell pepper, cucumber, carrots, peanuts, green onions, and cilantro.
- In a separate bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, and garlic until smooth.
- Pour the dressing over the salad and toss to combine.
- Serve immediately, garnished with additional peanuts and cilantro if desired.
Notes
- For a vegetarian option, substitute chicken with tofu.
- Adjust the sweetness of the dressing by adding more or less honey.
