- 2 tablespoons vegetable oil
- 1 pound ground pork
- 1 cup finely chopped green onions (divided)
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 4 cups chicken broth
- 2 cups water
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 package (14 ounces) frozen potstickers (chicken or pork)
- 1 cup baby bok choy, chopped
- 1 cup sliced mushrooms
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the ground pork and cook until browned, breaking it apart with a spoon, about 5-7 minutes.
- Stir in half of the chopped green onions, garlic, and ginger. Cook for an additional 2-3 minutes until fragrant.
- Pour in the chicken broth and water, then add the soy sauce and sesame oil. Bring the mixture to a boil.
- Once boiling, add the frozen potstickers to the pot. Reduce heat to a simmer and cook for about 8-10 minutes, or until the potstickers are heated through.
- Add the chopped bok choy and sliced mushrooms to the pot. Simmer for another 3-5 minutes until the vegetables are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with the remaining green onions and cilantro if desired.
Notes
- For a vegetarian version, substitute the ground pork with crumbled tofu or a meat substitute and use vegetable broth instead of chicken broth.
- Add additional vegetables like carrots or snap peas for extra nutrition and flavor.
