- 1 bag (12 oz) tortilla chips
- 2 cups shredded cheddar cheese
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 jalapeño, sliced (optional)
- 1 cup diced tomatoes
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1/4 cup fresh cilantro, chopped
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the pulled pork, black beans, corn, chili powder, cumin, salt, and pepper. Mix well to ensure all ingredients are evenly coated with spices.
- On a large baking sheet, spread out the tortilla chips in an even layer.
- Evenly distribute the pulled pork mixture over the tortilla chips.
- Sprinkle the shredded cheddar cheese generously over the top.
- Add sliced jalapeños, if using, and diced tomatoes on top of the cheese.
- Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and drizzle with sour cream.
- Garnish with chopped green onions and fresh cilantro before serving.
