Description

Pulled Pork Nachos are a delicious and indulgent dish featuring layers of tortilla chips topped with savory pulled pork, melted cheese, and fresh toppings.


Ingredients

  • 2 cups cooked pulled pork
  • 1 bag (12 oz) tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 jalapeño, sliced (optional)
  • 1 cup diced tomatoes
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the pulled pork, black beans, corn, chili powder, cumin, salt, and pepper. Mix well to ensure all ingredients are evenly coated with spices.
  3. On a large baking sheet, spread out the tortilla chips in an even layer.
  4. Evenly distribute the pulled pork mixture over the tortilla chips.
  5. Sprinkle the shredded cheddar cheese generously over the top.
  6. Add sliced jalapeños, if using, and diced tomatoes on top of the cheese.
  7. Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and drizzle with sour cream.
  9. Garnish with chopped green onions and fresh cilantro before serving.
