- 3 cups rhubarb, chopped into 1-inch pieces
- 1 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/2 cup unsalted butter, melted
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the chopped rhubarb, granulated sugar, cornstarch, vanilla extract, and ground cinnamon. Toss until the rhubarb is well coated.
- Transfer the mixture to a greased 9×13-inch baking dish.
- In another bowl, mix together the rolled oats, all-purpose flour, brown sugar, melted butter, and salt until crumbly.
- Sprinkle the oat mixture evenly over the rhubarb layer in the baking dish.
- Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the rhubarb is bubbling.
- Remove from the oven and let it cool for about 10 minutes before serving.
Notes
- For a twist, try adding 1/2 cup of chopped strawberries or blueberries to the rhubarb mixture for added flavor.
- You can also substitute the all-purpose flour with almond flour for a gluten-free option.
