Ingredients

  • 3 cups rhubarb, chopped into 1-inch pieces

  • 1 tablespoon cornstarch

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter, melted
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the chopped rhubarb, granulated sugar, cornstarch, vanilla extract, and ground cinnamon. Toss until the rhubarb is well coated.
  3. Transfer the mixture to a greased 9×13-inch baking dish.
  4. In another bowl, mix together the rolled oats, all-purpose flour, brown sugar, melted butter, and salt until crumbly.
  5. Sprinkle the oat mixture evenly over the rhubarb layer in the baking dish.
  6. Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the rhubarb is bubbling.
  7. Remove from the oven and let it cool for about 10 minutes before serving.
