Rhubarb Custard Bars are a delightful dessert featuring a sweet and tangy rhubarb filling nestled between a creamy custard layer and a buttery crust.

- 2 cups fresh rhubarb, chopped into small pieces
- 1 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup all-purpose flour
- 1/4 teaspoon baking powder
- 2 large eggs
- 1/2 cup milk
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or line it with parchment paper for easy removal.
- In a medium bowl, combine the chopped rhubarb, 1/2 cup of sugar, cornstarch, vanilla extract, and salt. Mix well and set aside.
- In another bowl, whisk together the melted butter, remaining 1/2 cup of sugar, flour, baking powder, eggs, and milk until smooth.
- Pour half of the batter into the prepared baking dish and spread it evenly.
- Spoon the rhubarb mixture over the batter, then pour the remaining batter on top, spreading it gently.
- Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for about 15 minutes before slicing into bars.
- Serve warm or at room temperature. For best results, chill in the refrigerator for a couple of hours before serving.
Notes
- For a sweeter twist, add 1/2 teaspoon of cinnamon to the batter.
- You can substitute the rhubarb with equal parts of strawberries or blueberries for a different flavor profile.
